All you need to know :
Olive oil is a 100 % natural pure “fruit juice”.

EXTRAIT A... : (Extracted) describes the technique used to extract the olive juice using centrifugal force.

A FROID : (Cold extraction) means the olive juice is extracted at a temperature below 27°C so as not to lose any aromas.

  For quality control purposes, the mill owner must keep a trace record of the product.
Oil analyses are carried out regularly to monitor the evolution of the oil.


A good olive oil will keep for 18 months before opening and 6 months after opening. It should be stored away from light (in an opaque container or in a dark place), in an airtight container (e.g. a closed bottle) and away from heat (preferably at about 18°C).
AOC de la Vallée des Baux de Provence :
The Mas Saint Jean mill only produces AOC oil, a top quality oil. The Decree awarding the AOC label guaranteeing the origin and quality of the oil produced in the Baux de Provence Valley was published in the Government gazette on 27th August 1997.
